Day 1: Arrival

On the first day, your hosts will pick you up from Agen train station and drive you to the school. There will be plenty of time to settle in and explore the area before dinner. Join your host and the rest of the class in the evening for a gourmet three-course dinner followed by a short discussion of what to expect during your cooking vacation.

After breakfast you will go to a local village market and enjoy coffee and croissants with the locals. Take your time to look over what is in season and learn what specific ingredients Gascony is well known for. Go back to the farmhouse and enjoy a delicious lunch by the pool. Later in the afternoon, enjoy a tasting of regional wines, sampling the best that local family producers have to offer.

It’s time to enter the kitchen and start cooking! Your focus will be on preparing quick and easy plates that can be adapted to work as lunches, light snacks or starters. After lunch, visit a family-run foie gras business, learn how it is made and taste it cooked in three different ways. In the evening, visit a family-run Armagnac distillery (which Gascony is famous for) and then return to the farmhouse for a delicious three-course gourmet meal.

Today your cooking lesson will focus on salads, dressings, and quiches. Using some foie gras from yesterday, you will also learn how to prepare a terrine. Lunch will be served by the pool or in the farmhouse kitchen. Later in the afternoon you will visit a beautiful chateau famous for its aperitifs and wines. Dinner will be served back at the farmhouse giving you time to relax in the lounge or by the swimming pool.

Start your day by visiting the ancient town of Condom. Mingle with the locals, go on a tour of the cathedral, sample cheeses, meats and fruits from the market and then relax with a coffee and watch the passers-by. Lunch will be served at a gourmet restaurant. Return to the kitchen and learn how to prepare fabulous dinners that you can enjoy with your guests. After your lesson is complete, cleanse your palate with a course about Champagne and learn about the "methode traditionnelle ou champenoise".

Today you will learn some useful kitchen tricks and work with the skills you have learned during the week to prepare a meal fit for a king. In the afternoon, spend time discovering cheeses from the region and around France. Back at the farmhouse you can relax by the pool and spend time with your new friends putting all you have learnt to the test as you match wine and champagne with cheese and foie gras.

Relax with a delicious breakfast this morning before heading out on a fun day trip. Today you willl enjoy an excursion to one of the nearby attractions: Dune du Pilat, the Pyrenees mountains, Bordeaux, Toulouse or Biarritz, depending on the group's preferences. Explore the stunning scenery and relax on your final day, enjoying lunch together. In the evening you will return to the accommodation for your farewell dinner, where you will reflect on the week and how much you have learned.

For the duration of your cooking vacation you will stay in a beautifully restored 180-year-old farmhouse set in 50 acres of meadow and woodlands. Five rooms separated into two gites are available for guests.

Adam Bray started to cultivate his passion for food and wine after he stopped working in global consulting and finance. He has honed his skills over the last decade living in the garden of France, an area rich in gastronomic delights, fabulous wines, and amazing Armagnac. For Adam, cooking is a journey through the senses. Throughout your culinary experience with Adam, you will spend time sampling the local produce and understand how they are made.
